Apple Muffins

need:

2 cups flour
2 tsp baking powder
1/4 cup white sugar
1/2 tsp cinnamon
1 cup milk
1 egg, beaten
1/4 cup butter, melted
1 cup apple, peeled, cored, and chopped

do:

Mix the dry ingredients (flour, baking powder, sugar, cinnamon, salt). In a different bowl, mix the wet ingredients (milk, egg, butter). Add the wet stuff to the dry stuff and mix, but only until it's just combined. Be careful not to overmix 'em. Add the chopped apple and "fold" it into the batter. Again, don't overmix. Spoon into baking cups. Bake at 400F for 20 minutes, or until a toothpick comes out clean when inserted. Makes 12 muffins.

I used braeburn apples, 'cause I love them, and they were sooo delicious. I'm thinking of sprinkling some sugar on top of the batter before baking next time to make a nice, crusty, sugary top.
